Greek Yogurt Mustard Chicken October 11, 2012

This was sooo good!  Even Mike, who is a self-proclaimed chicken “hater” said how much he liked this dish!  AND , it is pretty healthy if I might say so myself! I just whipped up the recipe and Ingredients together and prayed for the best – Thank Goodness it was really yummy!  I am trying to limit our salt intake, and the only salt in this was the little bit in the yogurt , panko, and dijon mustard! Yum!

4 chicken Cutlets

1.5 cups greek yogurt

1/3 cup dijon mustard

Lots of pepper!

Dash of Trader Joe’s Seasoning Blend – No salt!

Scallions to finish off

1/3 cup panko breadcrumbs

Preheat oven to 375.

In bowl mix together all ingredients but the scallions.  In square baking dish, spray bottom with cooking spray, then place the 4 chicken cutlets on bottom.  Spread yogurt mixture overtop the chicken, almost like icing a cake!  Sprinkle Panko and put in the oven for 45 minutes, or depending on your chicken cut/thickness.  Once out of the oven sprinkle scallions on top – and serve.
