Sundried Tomato Turkey Meatballs April 26, 2011

If there is one flavor I LOVE it is sundried tomatoes.  This recipe is for a meatloaf – but I just love making meatballs instead!  I served this with a marinara sauce with sundried tomatoes, to intesify the flavor even more.  I put this over a polenta and it was an awesome dinner.


1/2 cup sun-dried tomatoes, packed in oil, chopped small
1/2  cup tomato sauce
1 cup bread crumbs, Plain ( you can use seasoned just opt the dry herbs ingredients if you do)
1 tbsp each of  dried marjoram, dried basil, dried oregano, and garlic powder
3/4 cups chopped fresh basil
1/2 cup (2 ounces) shredded sharp provolone cheese
2 Large egg whites
1/2 large onion, grated
1 pound ground Turkey
Cooking Spray
1/3 cup ketchup
Preheat oven at 350 degrees F

Combine all ingredients – heat oven proof skillet with a little oo.  Sear all sides to carmelize.  Pour Marinara sauce in pan, and add a little extra sundried tomatoes.  Place pan in oven to continue cooking until cooked through.
