I was in a rush to make dinner after an all day shopping extravaganza with my cousin, and this was just perfect! I got the recipe from Taste of Home, and the pizza dough from Trader Joe’s the day before. I just love when things come together!
1 package refrigerated dough
2 tbsp creamy peanut butter
2 tbsp teriyaki sauce ( I used Soy Vey from TJ’s )
1 tbsp Thai Chili Sauce
1 tsp honey
2 cups grilled chicken
1 cup shredded cheese ( I used Fontinella from Delallo’s)
1/2 cup shredded carrot
1/2 cup sliced snap peas
2 green onions chopped
1/4 cup onion diced.
Preheat oven to 375. Roll out dough on a greased pizza stone. Bake for 5-6 minutes or until lightly browned.
Meanwhile , in a small bowl, whisk the peanut butter, teriyaki sauce, chili sauce, and honey. Saute snap peas, carrots, and onion in 1 tbsp olive oil or until almost cooked through.
Spread peanut butter mixture on crust. Add veggies, chicken, then top with cheese. Bake for 10-15 minutes or until golden brown. Sprinkle with green onions.
