Another great dish from Giada ! How many times have I said that on this blog? LOL – this was perfect, made so much, and re-heated for quick lunches over the weekend perfectly! As always , the picture does not do it any justice!
Heat oven to 400
Bring salted water to a boil and cook pasta according to package directions
While pasta is cooking saute chicken ( seasoned with salt and pepper, and some garlic powder ) in a small frying pan coated in cooking spray or olive oil for about 3 minutes
Add onions, garlic, and red pepper and stir occasionally until chicken is cooked through and onions are tender
Drain pasta and pour into a mixing bowl. Add cubed mozzarella, tomatoes and chicken mixture, stirring to combine. Pour pasta mixture into greased 8″x8″ baking dish
Mix together parmesan cheese, bread crumbs, parsley, and melted butter until combined then sprinkle over top of pasta mixture
Bake for 25 minutes or until bread crumb topping is browned and sides of pan are bubbling
