Pierogie Partay! September 28, 2009

004 (Small)005 (Small)001 (Small)002 (Small)003 (Small)We didn’t have anything to do Saturday night, and now since I think I a master of anything involving Noodle Dough… Me, Nicole, and Shannon went over Nicole’s house and made the most delicious pierogies!  Me and Nicole are 1/4 Polish, and after these were such a success, we now think we are 100% Polish Princessess.  We even made haluski with the leftover cabbage and it was to die for! Now we don’t have to wait for holidays to buy them from all the local churches!  We made 3 fillings:

  • Sauerkraut

2 lbs sauerkraut

2 tablespoons sugar

1 onion cut in small pieces

1 tablespoon salt

Saute onion in butter , until see through.  Add all other ingredients and combine – Get ready to stuff!

  • Cabbage

1 /2 head of cabbage cut into small pieces

1 onion cut into small pieces

salt and pepper to taste

Again saute onion in butter until softened. add the rest of the ingredients and get them ready to be placed into the little pierogie pillows!

  • Potato and Cheese

We cheated on this one!  And it still was sooo delicious

1 tub Bob Evans Mashed Potatoes

1 onion chopped into small pieces

1 cup cheddar cheese

Saute onion and butter – add the rest of the ingredients – don’t feel bad about not making homemade mashed potatoes!! 🙂

The Dough:

  • 3 egg
  • 1 (8 ounce) container sour cream
  • 3 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon baking powder
  • To make the dough, beat together the eggs and sour cream until smooth. Sift together the flour, salt, and baking powder; stir into the sour cream mixture until dough comes together. Knead the dough on a lightly floured surface until firm and smooth. Divide the dough in half, then roll out one half to 1/8 inch thickness. Cut into 3 inch rounds using a biscuit cutter  or round ravioli press.

    Place a small spoonful of the mashed potato filling into the center of each round. Moisten the edges with water, fold over, and press together with a fork to seal.

    As we were making the mess in the kitchen… Look what Rob and Mike were doing~!  Typical!!

      yummm these look really good! i will have to try them! How do you cook them once they are assembled? boil, fry or both?
