I am always on a search for the perfect meatball recipe. This one I mostly made up myself ( with a little help from the Barefoot Contessa) . These were excellent on a toasted roll with Trader Joe’s 4 cheese italian mix melted all on top – yummy.
1 package meatloaf mix ( pork/veal/beef)
1 cup chopped parsley
2 cloves garlic minced
1 tblspoon tastefully simple Onion! Onion!
1 tblspoon tastefully simple Sun dried tomato/Garlic Pesto seasoning
1/2 cup italian breadcrumbs
1 tsp red pepper flake
1/4 cup dijon mustard
1/4 cup jarred spaghetti sauce
1 tblspoon italian seasoning
3 slices bread, crust taken off – pulsed in the food processor.
1 cup grated romano cheese
salt and pepper
1/4 cup milk
1/4 cup hot water
Combine all ingredients ( except meat mixture ) in bowl until combined. Add Meat, and mix until consistent throughout. Form into whatever sized meatballs you like. Sautee in pan with EVOO, and brown on all sides. Remove meatballs from pan and drain off excess oil. Return to pan and coat with jarred spaghetti sauce. Simmer until bubbling!
