I got this from the blog – Daily Unadventures In Cooking – It was absolutely delicious! I made some adjustments , as Mike likes more curry in everything he eats!
Curried Mango Chicken Salad (makes 2-4 sandwiches)
1 rotesserie chicken breast – chopped
3 tablespoons mayonnaise
1 small container plain yogurt
1 teaspoon Dijon mustard
4 teaspoons curry powder
1 handful cilantro, chopped
4 scallions , sliced
1 cup sliced frozen mango, defrosted
salt and pepper
1. Combine mayo, curry, yogurt, mustard and salt and pepper. Taste for seasoning.
2. Combine thoroughly with the chicken, scallion and cilantro. Gently toss in the mango.
