004-small4005-smallAlong with the Mac and Cheese, We served Salad, Coconut Crusted Grouper ( that Mike Caught ) with Coconut Rice, Shrimp Pil Pil with Crusty Bread, Garlic Broccoli with Pine Nuts, and Onion Crusted Chicken Fingers.

 

 

 

 

003-small3Chicken Fingers – Right from the Box!

2 packages Chicken Fingers

2 packages Onion Soup Mix

1/2 cup bread crumbs

Butter

Bread Chicken and place in Baking Dish , covering with about 5 pats of butter- In oven ( 425 degrees )  – cook until brown and crispy * about 25 minutes.

This is from Everyday with Rachael Ray – it was very spicy, but everyone loved it!

 

 

1/2 cup extra-virgin olive oil

 

 

2 cloves garlic, thinly sliced

 

 

1 teaspoon crushed red pepper

 

 

1 teaspoon sweet smoked paprika

 

1 pound large shrimp, peeled and deveined (tails left on)

 

 

Salt

 

 

2 tablespoons chopped flat-leaf parsley

 

 

1 loaf crusty bread, sliced

 

1. In a large, heavy skillet, heat the olive oil over medium-high heat. Add the garlic, crushed red pepper and paprika and cook, stirring, for 30 seconds. Season the shrimp with salt, add to the skillet and cook until opaque, 1 to 2 minutes on each side. Remove from the heat and stir in the parsley.
2. Transfer the shrimp mixture to a bowl and serve with the bread.
