Warm Shallot Dressing February 17, 2009

002-smallFor Valentine’s Day, I made my normal V-Day meal : Filet Mignon with Goat Cheese & Balsamic Syrup ( Recipe on this blog, in an earlier post!! https://tiffanyrose913.wordpress.com/2008/04/01/filet-with-goat-cheese-and-balsalmic-reduction-served-over-mashed-yams/)  – I served this on top of Fried Asiago Polenta Rounds, and a side salad.  I wanted this salad to have a special dressing ( not out of a bottle ) , and this was perfect!  I got this from Cooking This and That’s blog.

1medium shallot, minced

1 tablespoon olive oil
3 tablespoons Dijon mustard
3 tablespoons Balsamic vinegar
2/3 cups good quality extra virgin olive oil
kosher salt and coarse ground black pepper
Heat 1 tablespoon olive oil in small skillet over medium heat. Add shallot and cooked until slightly tender, 3-5 minutes.
Combine mustard, vinegar, and shallots in small bowl. Slowly whisk in 2/3 cup olive oil. Season to taste with salt and pepper.
Heat dressing in microwave 20-30 seconds
