I have my very first GUEST BLOGGER!! And yes, he may not be 2 years old yet, but he sure knows how to make a good cookie!! Here is a picture of Jackson in the pumpkin patch – How adorable is he??!?! Jackson is my friend Gretchen’s son, and I just had a very fun visit with him up in New York 2 weeks ago, and he told me I just had to post this yummy recipe!
1 Cup Cooked Canned Pumpkin
¾ Cup Sugar
½ Cup Oil (I use Walnut Oil—very heart healthy!)
2 Teaspoons Baking Powder
½ Teaspoon Salt
1 Teaspoon Cinnamon
1 Teaspoon Baking Soda dissolved in 1 Teaspoon Milk
2 Cups Flour
2 Teaspoons Vanilla
1 Cup Chocolate Chips (I use the whole bag!)
Optional: ½ Cup Chopped Nuts
Using a large mixing bowl combine pumpkin, oil, sugar, and egg. Add baking powder, salt, cinnamon, baking soda and milk. Stir in flour. Add vanilla, chocolate chips and optional nuts. Drop by teaspoon on lightly greased cookie sheet. Bake at 375 degrees for about 10-12 minutes.
TIP: They are much much better the next day!
