Chicken & Noodles October 29, 2008

It was a chilly day in the Burgh – So I decided to make this Soup-like dish.  I used frozen homemade “dumpling” noodles from Giant Eagle – they were perfect in this!

1/2 package carrots chopped

1 package celery chopped

1/2 onion chopped

2 cloves garlic chopped

olive oil

herbs de provence

chicken stock

chicken tenders – chopped


In Dutch Oven, add chicken until brown on both sides, remove from pan.  In same pan add veggies and sautee for 10 minutes or until tender.  Add salt, pepper, and herbs de provence.  Add Chicken back in pan, along with chicken broth – enough to cover.  Simmer for about 2 hours.  Add some more chicken broth, then simmer some more.  In another pot , boil salted water, and add frozen homemade dumplings.  Once al dente, strain and add to “soup” – this should thicken the broth up.  You don’t want it to be too soupy!  Add fresh parsley and serve.
