Wedding Soup! October 14, 2008

It is FINALLY getting a little colder outside, and I just couldn’t wait to make my first soup of the season.  I bought some meatball mix ( Veal, Pork, & Beef ) , so I decided to make this soup that I love!  I especially love the little squares of romano cheese at the bottom of the bowl of soup that melt just enough , and are the perfect addition to this soup!

For the meatballs:

Meatball Mix

1/2 cup pecorino romano cheese

1/4 cup chopped parsley

Salt and Pepper

Dash of grill seasoning

dash of Herbs de provence

2 cloves of garlic diced

1 egg

panko and italian bread crumbs mixed

Combine ingredients and form into small balls.  Brown in dutch oven on all sides to caramelize.  Remove from Dutch Oven.

For the soup:

I/2 package baby carrots – chopped

1/2 package of celery – chopped

1/2 whole onion – chopped

1 clove garlic – chopped

salt & pepper

Chicken Stock

Romano Cheese

Acini di Pepe noodles

1/2 package of baby spinach

Saute veggies in a small amount of olive oil in dutch oven until caramelized.  Add Meatballs, Spinach,  & Chicken Stock ( 2 cartons ) . Simmer for 5 hours. Dice small squares of romano cheese and add to bottom of soup bowls.  Yummm Comfort food!
