I was in the mood for mexican so I sort of just made up this recipe because I knew my sister was making mini meatloaves and I combined the 2 things! I served it with Tomato/Onion/Blue cheese salad and seared brussel sprouts.
1 package of ground beef
1/4 cup chopped onion
2 cloves garlic chopped
1/2 cup panko/italian bread crumbs
1/4 cup trader joe enchilada sauce
salt and pepper
red pepper flakes
1/4 cup salsa
1/4 cup colby jack cheese
Preheat oven to 350 degrees. Spray Muffin Tin with cooking spray. Form Meatloaf into tin – cook for 25 minutes, and golden brown. Top with Salsa – very quick dinner!!
