I was watching one of my fave Food TV Shows – Tyler’s Ultimate , when I saw him make these delicious chicken sausage meatballs in the foodprocessor – Brilliant! Well, I started making these then realized … I DON’T HAVE ANY EGGS!!!! I am cleaning out my fridge and freezer because of the big move ( countdown 9 days – yikes!! ) and have not been grocery shopping lately. So, I decided to make the best of it and just use the ground sausage anyways! It turned out great!
1 package trader joes pesto gnocchi
1 clove garlic
1/2 sweet onion
2 cups frozen broccoli
3 roasted red peppers
Dash white wine
2 links of chicken sausage ( I used TJ’s Spicy Red Pepper Sausage )
Bring water to boil and add broccoli & gnocchi until tender. In processor add 2 chicken sausage links, garlic, onion, parsley, basil, roasted red pepper & Pulse. Add to a saute pan with some EVOO & stir for about 5 minutes. Add Wine & Chicken stock and reduce. Add broccolli & gnocchi and combine. Add cheese & serve! Quick and Delish!
