Sherried Tomato and Red Pepper Soup April 16, 2008

Since I made tomato basil soup a couple weeks ago, I needed to use the rest of my tomato juice, so I decided to make another version!  This was originally from the Pioneer Woman, but I made some substitutions.  When I first started making this soup, I realized I only had one can of tomatoes, so I subbed in Roasted Red Peppers, and it was delish!

1 medium onion chopped

1 clove garlic chopped

6 tbl butter

1/2 cup sherry

1/2 cup half and half

handful of basil

handful of parsley

1 14 oz can of tomatoes

1 can of roasted red peppers

30 oz tomato juice

salt and pepper

In pan – sautee butter, garlic, and onion.  Once soft add tomatos and red peppers.  Add tomato juice and sherry and bring to a bubble.  Once bubbling add basil, parsley ,and half and half.  Remove from heat -and emulsify with hand blender.  Really good!
