It was beautiful outside, and I wanted to use the grill! I marinated chicken in garlic, thyme, and italian dressing and skewered them with red pepper, mushrooms, and onions. Grilled them until done, and served with the pasta.
This recipe was from Everyday Italian, and I just substituted brussel sprouts for green beans because I didn’t have beans!
1/2 cup ricotta cheese
1 cup whole wheat penne
10 grape tomatoes cut in half
2 cloves of garlic minced
