I saw this recipe on Good Deal with Dave Lieberman, and it just looked so tasty!
1 bottom round roast – 4 pounds
salt and pepper
3 small onions medium copped
1 head garlic chopped
1/2 bag baby carrots – chopped
3 stalks celery chopped
2 cups beef broth
2 cups red wine
2 1/2 tablespoons of honey
5-6 sprigs of fresh thyme
2 pounds of yams, peeled and cut into cubes.
Preheat oven to 350 degrees.. Season Roast with S & P , and add to Dutch oven with the OO. Sear all sides ( about 10 minutes ) Remove and side aside on a plate. Lower heat to medium and saute onions, garlic, carrots, celery for 5 minutes. Add wine, broth, honey, and thyme , deglaze then add roast back to pot.
Cover pot and transfer to oven. Bake for 2 hours, turning meat over twice. Add potatoes to the pot and bake, uncovered, for another 30 – 45 minutes longer until both the potatoes and meat are fook tender.
