Broken Pasta with Goat Cheese Tomato Sauce March 26, 2008

I got this recipe from the Elly says Opa blog.  I was a little afraid of the combo of the goat cheese and tomato sauce, but this was sooo good.  The peas added a little sweet crunch to it that was perfect!

1 tbsp olive oil

2 chicken sausages ( I used Trader Joe’s roasted red pepper )

1 small onion diced

3 cloves garlic diced

1 tbsp tomato paste

1/4 tsp crushed red pepper flakes

few tbsp white wine and chicken broth

1 28 oz can of tomatoes crushed

1/2 cup frozen peas

3 tbsp fresh basil chopped

1 small ( 4 oz ) log of goat cheese

salt and pepper

12 oz of lasagna broken into chunks

In large skilled add olive oil and sausage until browned.  Add onion then garlic until tender.  Add tomato paste and red pepper flakes.  Cook for 1 minute and deglaze pan with wine/broth.

Add crushed tomatoes and salt and pepper.  Turn to medium-low and simmer for 10 minutes.  Add peas and heat through.  Stir in basil and goat cheese and remove from heat.  Stir the goat cheese into the sauce.  Combine with cooked pasta – Yum!  I served it with a side of Parmesan Crusted Broccolini , it was heaven!
